Homemade Pizza and a Family Movie, it must be Sunday…

Pizza is always a much appreciated dinner. I like to bake it on Sundays which very often is our Family Movie Day. I bake two large trays of pizza so I can enjoy the leftovers for lunch the day after.My family and I prefer the classic pizza base: tomato sauce and plenty of mozzarella cheese. The topping vary. My favourite is: hard-boiled eggs, mushrooms, cherry tomatoes, salami, spinach and black olives. I like scattering my toppings on to top of my pizza base close to each other but not mix – similar to pizza“Quattro Stagioni”. Continue reading

Scrumptious Omelette with a heart of melting goat cheese, mozzarella cheese and sweet cherry tomatoes.

It’s always elegant to use goat cheese in a recipe: its mellow but strong-tasting flavour combines fantastically with eggs. I like to fold my omelette (even if the classic Italian “frittata” is normally not folded!), because the eggs and the filling mix gently together and remain soft. It’s a question of texture: in order to avoid dry folded omelettes, its important do not overcook them, I also add mozzarella cheese for extra velvety. Continue reading

Creamy Sauce with the distinctive flavour of Salmon

This recipe is the first pasta sauce I have ever cooked. In Italy in the late eighties the use of salmon for a pasta dish was considered a little bit “exotic” and “adventurous”, I loved it. I have improved the recipe over the years and substitute canned with fresh salmon. The flavour improves significantly.
